People in the Hamptons often ask me: “What kind of food do you cook?” I always respond, “farm-to-table” or “ocean-to-table.”
I know that both are great answers and that they make sense, but am I telling the truth?
The great thing about hiring a local private chef is that he or she often lives near the beach or by the farms. That usually means that the chef knows the fisherman and the farmers and also lives the local life.
For my wife and I, the beauty of living “out east” involves going to the bay or the beach every single day of the year, even if it’s just to go check out the swans on Mecox Bay or to go over to Flying Point to watch the ocean waves.
And when it comes to my ocean-to-table cooking, the fish I buy always comes from Cor-J Seafood in Hampton Bays. I’ve spoiled many a client in East Hampton, Water Mill and Southampton with the fresh catch I’ve found there. The knowledgeable staff know all the regulars by name. These ladies have worked there for years and won’t steer you wrong. Plus, they get me in and out quickly. In the summer, the lines can be very long and their parking lot is small, but the wait is totally worth it, especially for the amazing local blowfish that are fantastic dipped in batter and fried—with an ice-cold beer, there’s nothing like it!
All the good restaurants in the Hamptons also buy from Cor-J. You will see their truck making deliveries as far away as Manhattan.
Since Cor-J doesn’t do home delivery, you will need to take the ride just north of the Ponquogue Bridge in Hampton Bays across from the coast guard station. They are located at 36 Lighthouse Rd in Hampton Bays.
Even if you only make the trip once a year it would be worth it!
